Mechanical Foam Breaker for Soy Sauce Moromi Fermentation
Moromi (soy sauce mash) fermentation produces thick foam as yeast and enzymes work through the mash. Foam overflow loses product, disturbs fermentation and can carry spoilage organisms — and chemical defoamers risk affecting the delicate flavour balance.
What foam actually costs you
- ▲Thick fermentation foam overflows the vat — yield loss and floor contamination
- ▲Trapped mash in foam spends less time reacting, reducing extraction efficiency
- ▲Chemical defoamer residue can affect the fermented flavour profile
- ▲Foam carry-over fouls vents and makes level reading unreliable
How the DP Series fixes it
The DP Series mounts on moromi fermenters and mechanically destroys foam in a centrifugal chamber, returning separated liquid to the mash. Continuous operation with no chemical addition.

Flange-mounted on closed fermenters and brewing tanks.

Why a mechanical foam breaker beats chemical defoamers here
Mechanical foam breaker (DP Series)
- • No chemical dosing — zero interference with your process chemistry
- • One-time purchase, 12-month warranty, 10-year service life
- • No ongoing anti-foam agent cost — payback in 6-12 months
- • No residue in product or effluent — food & pharma safe
- • Centrifugal principle: instant foam breaking at the surface
Chemical defoamer dosing
- • Recurring chemical cost every month
- • Can alter product flavour, colour or reaction chemistry
- • Residue in effluent increases wastewater load
- • Dosing pump maintenance and inventory
- • Overdosing kills the foam you actually need
Frequently asked questions
Why does moromi fermentation produce so much foam?
Moromi is a thick, protein-rich mash. As yeast and enzymes work, gases rise through the viscous liquid and build stable foam that can overflow the vat.
Does the DP Series affect soy sauce flavour?
No. It adds nothing to the mash — no chemicals, no residue. Chemical defoamers risk affecting the delicate fermented flavour profile; mechanical breaking does not.
Where is the foam breaker mounted on moromi tanks?
The DP-F model mounts on the fermenter top or upper side of closed brewing tanks, drawing foam into the breaking chamber and returning liquid to the mash.
How does foam control improve soy sauce yield?
Less foam overflow means less product lost per batch, and mash that spends less time trapped in foam extracts more completely.
