Mechanical Foam Breaker for Vinegar Fermentation

Acetic acid fermentation generates strong surface foam as aeration and metabolic gases rise through the mash. If it escapes the fermenter, you lose product, acid and process time — and chemical defoamers can interfere with the acetobacter culture itself.

What foam actually costs you

  • ▲Surface foam escapes the fermenter — measurable product and acid loss per batch
  • ▲Foam carries culture out and contaminates exhaust and downstream equipment
  • ▲Chemical defoamers can inhibit acetobacter activity and leave residue in the vinegar
  • ▲Stable foam hides true liquid level, so operator control becomes guesswork

How the DP Series fixes it

The DP Series flanges onto closed vinegar fermenters, draws foam into a centrifugal chamber and destroys it mechanically — the separated liquid returns to the mash. No dosing pumps, no chemical inventory.

DP foam breaker model range for Vinegar

All DP models use the same mechanical defoaming principle — choose by your foam overflow rate. Size up one step if your rate is near the upper limit.

Why a mechanical foam breaker beats chemical defoamers here

Mechanical foam breaker (DP Series)

  • • No chemical dosing — zero interference with your process chemistry
  • • One-time purchase, 12-month warranty, 10-year service life
  • • No ongoing anti-foam agent cost — payback in 6-12 months
  • • No residue in product or effluent — food & pharma safe
  • • Centrifugal principle: instant foam breaking at the surface

Chemical defoamer dosing

  • • Recurring chemical cost every month
  • • Can alter product flavour, colour or reaction chemistry
  • • Residue in effluent increases wastewater load
  • • Dosing pump maintenance and inventory
  • • Overdosing kills the foam you actually need
FAQ

Frequently asked questions

Why does vinegar fermentation foam?

Acetic acid fermentation is strongly aerated, and the rising air plus metabolic gases form dense surface foam stabilised by the mash's proteins and sugars.

Will mechanical foam breaking harm the acetobacter culture?

No. The DP Series only destroys surface foam and returns separated liquid to the mash. Chemical anti-foam agents are the ones that can interfere with acetobacter activity.

Can I stop using chemical defoamers in vinegar production?

In most submerged vinegar fermentations, yes. A correctly sized DP Series replaces anti-foam dosing and removes the residue risk from the finished vinegar.

How much product loss does foam carry-over cause?

Every litre of liquid trapped in foam that escapes the fermenter is lost yield, plus the acid and process time behind it. In heavily foaming batches this adds up batch after batch.

What mounting options are available?

The DP-F model flanges onto closed fermenters and bioreactors. The separated liquid returns to the mash automatically.
